Hmong Pho

Ingredients:
For the broth:
- 4 lbs beef bones (preferably oxtail or beef neck bones)
- 2 lbs beef brisket or chuck, sliced
- 2 medium onions, sliced
- 4 cloves garlic, minced
- 2 inches ginger, sliced
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 cups beef broth
- 2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon grated ginger (optional)
For the noodles:
- 2-5 pound rice noodles (preferably fresh)
